Contest Entry Info:
To enter, you can submit up to three original recipes, they can be breakfast, lunch or dinner meals that you would prepare in your slow-cooker. In addition to submitting your recipe entry on our blog, you also need to submit a short video of you preparing your slow-cooker recipe along with it ready to serve up to YouTube and copy and past the link to your video with your recipe submission.

(Don’t worry, if you don’t have a video/web cam to do this with, you can take photos and create an online video using the FREE site we used for our promo video. Clickhere to check out Animoto for video creation from your photos.)

Get started as we will be awarding weekly prizes selected from entries at random each week. The judges at Eastman Outdoors cooking division will be selecting the three finalists and we will be announcing the winners here on our blog, on our Facebook page and our Twitter account.

Contest starts 12/15/2009 and runs through 1/31/2010 Midnight.

    Ginger Kickin’ Chick-Beef Chili

    Ingredients
    2 cups (1-inch) cubed chicken breast
    1 cup (1-inch) lean beef cubes (rib eye or tenderloin)
    2 tablespoons Worcestershire sauce
    2 tablespoons minced fresh ginger
    1 tablespoon crystallized ginger
    1 tablespoon minced garlic
    1 lime, zest and juiced
    1 tablespoon ground cumin
    1 teaspoon freshly ground black pepper
    1 teaspoon ground cinnamon
    3 Tablespoons Ancho Chili Powder
    2 teaspoon smoked paprika
    2 teaspoons sea salt
    1 cup chopped white onion
    1 cup chopped celery
    1 cup chopped mixed sweet peppers (red, golden, or orange)
    1 can (14.5 oz) black beans, rinsed and drained
    1 can (14.5 oz) kidney beans, rinsed and drained
    1 can (14.5 oz) white beans, rinsed and drained
    1 can (14.5 oz) diced tomatoes
    2 cups low sodium chicken broth
    1 cup beer
    2 tablespoons ketchup
    ¼ cup cornmeal
    Garnish
    2 cups grated cheddar cheese
    ½ cup chopped fresh cilantro
    Sliced lemon and or limes
    Sour cream (or plain yogurt)

    Preparation
    Thoroughly stir chicken, beef, Worcestershire, both gingers, garlic, lime zest, limejuice, cumin, pepper, cinnamon, chili powder, paprika, and salt in a slow cooker. Add onions, celery, peppers, and beans. Pour tomatoes, chicken broth, beer and ketchup on top; stir entire mixture together. Stir in cormeal. Cook on HIGH in a slow cooker for 3-5 hours or on LOW for 6-8 hours. Add salt to taste. Serve the chili garnished with cheese, cilantro, lemon or lime slices and sour cream.

    Serves 8-10.

    EASTMAN SLOW COOKER RECIPE CONTEST ENTRY

    Bratwurst Stuffed Onions
    4 large White Onions
    4 (5-inch) fresh Bratwurst Sausages (not cooked)
    1 (12 ounce) Beer (your choice – cheap and lite works well)
    1 tablespoon Spicy Brown Mustard
    1 tablespoon Classic Yellow Mustard
    ½ cup grated Cheddar Cheese
    2 tablespoons chopped chives
    Additional mustard or ketchup for topping

    To prepare stuffed onions: Trim just enough root end off each onion to make a flat bottom. Cut top end off onion making a 2” opening for scooping out. Remove paper skin and the next outer layer. Hollow center of the onion by scoring and cutting two big X’s. Use a grapefruit spoon or soupspoon to scrape the center out leaving the two outer layers. Fill each onion with bratwurst, removing and discarding the casing. Place stuffed onions in crock-pot, pour beer on top, squirt about 1 tablespoon of each mustard into beer. Cook on HIGH for 4-5 hours or on LOW for 6-8 hours. When onions appear done (tender when poked with a knife), uncover, sprinkle cheese over the top of each bratwurst, cover, turn to warm. When cheese has melted serve bratwurst. Serve individual Bratwurst Stuffed Onions in bowls along with at least ¼ cup onion-mustard broth. Garnish with chives and an extra squirt or mustard or ketchup. Great served with warm crusty bread for slopping in the broth! Slurp! YUM! Fun! Serves 4

    There are 4 reasons I’m so excited to submit my entry in your SLOW COOKER RECIPE CONTEST! First, my husband, a nonfoodie, actually suggested I try making a recipe by stuffing onions with bratwurst! (And I listened!) Second, when I did a google search there weren’t any other stuffed bratwurst onion recipes!!! My hubby and I have created a new, unique, never done before recipe – so fun! Third, this is my first photo video ever, and I’m just so proud of myself! Kisses to you for pointing me to Animoto. If this 55 year old, dinosaur computer user can do it, anyone can! Fourth, my husband and I love to camp. At our group site there is electricity. This recipe is perfect for camping because it is so easy in preparation and requires few ingredients. Thanks so much for motivating me to achieve so much! Enjoy!

    Elk or Beef Roast with Apple Ginger Gravy

    3 pound chuck roast (Elk or Beef)
    2 Tablespoons olive oil
    1/2 cup orange or apple juice
    1-2 teaspoons cinnamon
    1 teaspoon freshly grated ginger
    1/2 teaspoon nutmeg
    4 tart apples
    1/2 onion
    1/4 cup beef broth
    3 Tablespoons water
    1 Tablespoon cornstarch
    Salt and Pepper

    Directions:

    Heat oil in a skillet on medium-high heat. Brown roast on all sides (about 3 minutes per side). Season with salt and pepper. Place your roast in the slow cooker.

    Mix juice, broth and ginger together in a large measuring cup.

    Core apples and slice thin. Slice onions thin. Place apples and onions over the roast. Sprinkle with cinnamon and nutmeg. Pour juice mixture over your apples.

    Cook on low for 8-10 hours.

    Remove roast to a plate, cover with foil to keep warm.

    In a small bowl mix cornstarch into water until dissolved. Add to your slow cooker and mix well. Cook on high for 15 minutes.

    Remove gravy from your slow cooker and CAREFULLY blend until smooth in a blender or food processor. Serve gravy over your sliced roast.

    Stout and Coffee Braised Short Ribs

    10-12 beef short ribs (about 3 lbs.)
    1 medium onion, chopped
    1 carrot, chopped
    1 stalk celery, chopped
    6 whole cloves garlic
    1 cup beef broth
    1 pint stout beer
    3 bay leaves
    2 tbsp. brown sugar
    1 tbsp. instant coffee
    1 tbsp. coarse ground mustard
    Salt and pepper, to taste

    Put short ribs in slow cooker. In a medium bowl, combine the remaining ingredients and add to slow cooker. Cook on low for 8 hours or until meat is falling off the bone.

    Serve with mashed potatoes, grits, or crusty bread. Enjoy!

    Slow Cooker Applesauce

    6-8 apples
    Juice from 1/2 a lemon
    2 Tablespoons Agave (or sugar, honey… more for tart apples)
    2 Tablespoons cinnamon
    3/4 cup water

    Slice and core apples, slice thin. You can peel if you prefer. Lay them in your slow cooker and top with remaining ingredients. Cook in your slow cooker on low for 6-8 hours. Stir and enjoy! Eat in a bowl, over ice cream or pancakes, get creative!

    If you prefer a smooth rather than chunky applesauce just put it in your food processor after it has cooled and it’s ready!

    Italian Beer Soaked Pot Roast

    INGREDIENTS
    2-3 lb. pot roast meat
    1 dry package of Good Seasons Garlic Dressing
    1 dry package of your favorite Italian Dressing
    1 can of beer – best with pale ale – don’t use a dark beer

    DIRECTIONS
    Place one envelope of Good seasons in bottom of crock pot. Place meat on top, top with other package of dressing and pour beer over all. Let cook 8-10 hours on low. You can also make gravy from the sauce and then serve stuffed into baked potatoes or however you prefer.

    Turkey Chili

    Great for holiday leftovers or just a comforting meal on a cold day.

    Ingredients:

    My ingredients always change slightly based on what I have on hand, cili is great for that.

    For this batch I used:

    1 box tomato/roasted red pepper soup
    1 can tomatoes with green chilies
    2 cans black beans (rinsed)
    1 can corn
    1 scallion (chopped)
    1 cup mushrooms (sliced)
    1-2 cups chopped cooked turkey
    1 Tablespoon chili powder
    1 teaspoon fresh Thyme
    2 Tablespoons olive oil

    Optional for garnish:
    Sharp Cheddar
    Avocado
    Sour Cream

    Saute the mushrooms and onions in olive oil until onions are transparent.

    Mix spices with your soup in the slow cooker until well combined.

    Put all of your other ingredients into the slow cooker and mix well.

    Cover and cook on low for 8 hours.

    Top with garnish of your choice. I used sharp cheddar cheese, a dollop of sour cream and 1/2 of a small avocado.

    **This is a mild chili because I’m a wuss when it comes to hot, but if you like spicy feel free to add 1 Tablespoon of crushed red peppers.

    Our Boneless Chicken Breast & Mushroom Surprise

    INGREDIENTS
    4 chicken breasts (boneless/skinless)
    1 can soup: Cream of Mushroom
    1 can soup: Cream of Chicken
    8 oz. jar sliced mushrooms (better with fresh if you can get them)
    1 tsp. sugar
    1 tsp. garlic powder (or crush fresh garlic cloves to taste)
    salt & pepper to taste
    1 tsp. Mrs. Dash or other Multi-flavored salt free seasoning shaker
    1 pkg. egg noodles, cooked (we also substitute rice or potatoes)

    DIRECTIONS
    Combine soups, sugar, & mushrooms then place into crockpot. Mix dry seasonings together and wash chicken breasts & sprinkle (you can also place the garlic cloves into the soup mix). Place chicken on top of soups in crockpot.

    Cook on high 4-5 hours or low 8-10 hours. Serve noddles, rice or potatoes with prepared chicken breasts. Cook noodles and rice according to pkg. directions.

    Serves 4 but you can always double the recipe to serve more. This is so good for cold winter nights or on the weekend when you don’t want to fuss with making a big meal but want one.

    Sweet Country Style Ribs Recipe Contest Entry
    Here is our family specialty

    You’ll need these ingredients:
    2 cups cranberries (8 oz – canned or fresh – fresh is better)
    1/3 cup maple syrup
    1/3 cup packed brown sugar
    1/2 cup water
    1 Granny Smith apple, peeled and diced, 1 cup
    1 teaspoon Dijon mustard
    1/4 teaspoon cinnamon
    1/4 teaspoon mace or nutmeg
    3 to 4 pounds boneless country style ribs
    1 bag (16 oz) frozen small white onions, or 1 large onions, sliced
    1 tablespoon cornstarch mixed with 1 to 2 tablespoons cold water, optional if you want a thicker sauce

    How-to prepare this dish:
    -Get a saucepan and combine the cranberries, syrup, brown sugar, water, and apple; bring to a boil
    -Reduce the heat to medium-low and simmer for 5 minutes and stir in mustard, cinnamon, and mace or nutmeg
    -Arrange onions in the bottom of the slowcooker (5 to 7-quart slow cooker)
    -Put pork ribs on top of onions then spoon the cranberry sauce evenly over all
    -Cover and cook on LOW for 7 to 9 hours, until pork is tender

    Perfect for winter meals! We love our country-style ribs are teamed up with sweet potatoes and green beans for color and for a hearty meal!!

    Serves 6 to 8.
