    Bratwurst Stuffed Onions
    4 large White Onions
    4 (5-inch) fresh Bratwurst Sausages (not cooked)
    1 (12 ounce) Beer (your choice – cheap and lite works well)
    1 tablespoon Spicy Brown Mustard
    1 tablespoon Classic Yellow Mustard
    ½ cup grated Cheddar Cheese
    2 tablespoons chopped chives
    Additional mustard or ketchup for topping

    To prepare stuffed onions: Trim just enough root end off each onion to make a flat bottom. Cut top end off onion making a 2” opening for scooping out. Remove paper skin and the next outer layer. Hollow center of the onion by scoring and cutting two big X’s. Use a grapefruit spoon or soupspoon to scrape the center out leaving the two outer layers. Fill each onion with bratwurst, removing and discarding the casing. Place stuffed onions in crock-pot, pour beer on top, squirt about 1 tablespoon of each mustard into beer. Cook on HIGH for 4-5 hours or on LOW for 6-8 hours. When onions appear done (tender when poked with a knife), uncover, sprinkle cheese over the top of each bratwurst, cover, turn to warm. When cheese has melted serve bratwurst. Serve individual Bratwurst Stuffed Onions in bowls along with at least ¼ cup onion-mustard broth. Garnish with chives and an extra squirt or mustard or ketchup. Great served with warm crusty bread for slopping in the broth! Slurp! YUM! Fun! Serves 4

    There are 4 reasons I’m so excited to submit my entry in your SLOW COOKER RECIPE CONTEST! First, my husband, a nonfoodie, actually suggested I try making a recipe by stuffing onions with bratwurst! (And I listened!) Second, when I did a google search there weren’t any other stuffed bratwurst onion recipes!!! My hubby and I have created a new, unique, never done before recipe – so fun! Third, this is my first photo video ever, and I’m just so proud of myself! Kisses to you for pointing me to Animoto. If this 55 year old, dinosaur computer user can do it, anyone can! Fourth, my husband and I love to camp. At our group site there is electricity. This recipe is perfect for camping because it is so easy in preparation and requires few ingredients. Thanks so much for motivating me to achieve so much! Enjoy!
